Coconut sugar is a natural sweetener obtained from fresh coconut nectar. It grows high on the coconut palm. By drying the nectar in the sun, the water is removed, then the sugar crystallizes and is yellow-brown in color and has a pleasant mild caramel taste. According to the traditional method of production in Indonesia, coconut sugar is not refined.
In India, the coconut is called the tree that provides everything we need for life, in Mesopotamia the tree of a thousand uses, and in the Philippines the tree of life.
